Can sub evap milk for heavy cream; par bake pie crust for 10 min at 375 to avoid soggy crust; use parchment paper and weights in bottom of pie crust in pan
Made 10-21-22. Delicious, but potatoes were a little crunchy. Cheese was getting quite brown on top so could not have stayed in oven longer than 60 minutes. Next time try either parboiling potato slices or slicing very, very thin
9 X 13 casserole. Melt butter and mix with remaining cracker mix (don’t dot butter) to allow for more even distribution. Add some garlic for more flavor. Don’t cover skillet. You want the water in the squash to evaporate. 1/2 of the cheese and crushed cracker mixture is about 1 1/3 Cups. Made 8-29-22 with garden squash. It was delicious!
8-24-22 made with fresh palisades peaches. Increased flour to 3 1/4 Cups and decreased sugar to 1 1/2 Cups for altitude adjustment. Must cook 60 minutes or even tho toothpick comes out clean will be too moist in middle! Came out perfect and delicious!
Made 8-6-22. Did not have asparagus but all else as recipe called for. Sauce not very creamy. Leave out any pot juices and strain pasta well. Good, but took a lot of time to prepare because of all the chopping.
7-28-22 delicious! Makes lots! Used part cheddar and part velveeta. Did not have 8 cups broccoli but it was fine. Used only 2 C (1 pint) heavy creme and 7 C chicken broth.
Made 7-9-22. Used 4 pints of garden tomatoes instead of roasting 4 lbs of fresh tomatoes. Used jarred minced garlic. Left out red pepper flakes. Soup was delicious, but thin. Consider less chicken broth if using home canned tomatoes - maybe 1/2 C?
