Avocado Pasta Sauce with Tomatoes and Chicken

I used bow tie pasta, only boil what will be eaten without leftovers. I used cooked, cubed chicken. I used two avocado, and an immersion blender. The parm, and tomatoes make this dish pop.

Crock Pot Pork Roast with Beans-The Southern Lady Cooks

Harold made this in two crockpots, one for the meat, one for the beans. When the meat was done, he chopped, and added to the bean pot. He didn't do the onion, just seasoning salt, and pork seasoning. We decided 2 pounds of meat would have been enough.

Instant Pot Tuscan Sausage White Bean Soup

I used 3 cups dried pinto beans, salt, and 4 cups water to soak over night. Drained, and put back in the PC pot with 8 cups broth, seasoning, throw a wedge of parmesan cheese in, if you have one. Set for 40 to 45 min. When done, turn on saute, add cooked meat, more seasoning, if needed, frozen mixed veg. big can diced toms. Serve with shredded cheese and sour cream.

For tahini, lightly toast 1 cup sesame seeds, then pulse in vitamix with 1 Tbs. of olive oil. Can freeze leftovers.

Apple Compote for Overnight Oats, Pork, or Baked Sweet Potatoes

I added some quinoa for light main dish, as well as cubed, cooked chicken, and red peppers for some extra color. Cooked 1 cup quinoa with 2 cups broth, then added bag of frozen corn, and 2tbs. butter before done. Sauteed garlic, veggies, seasonings in a skillet, then served over the quinoa, corn mixture, and added parm. cheese on top. Very good and easy.
