Risotto

Julia Child's risotto method: sauté rice with aromatics, add wine and stir until absorbed. Then add hot broth ALL AT ONCE, bring to a simmer, cover and bake at 375 for 5 minutes, then 325 for 18. Perfect, creamy risotto every time. Add the vegetable at the end. We particularly like asparagus. A chunk of butter, perhaps a dollop of cream, and lots of Parmesan makes the risotto wonderfully creamy and delicious…not runny.

Absolutely delicious. Have made this at least ten times. Prefer it with bone in thighs. I usually add a splash of white wine, a few sprigs of thyme, & 2-3 garlic cloves to the gravy. To truly have tender chicken, braise in the gravy for an hour--needs much longer than 20-30 mins.

Crispy Gnocchi with Spinach and Feta

Super good, added an avocado that needed using which added a nice creaminess, also combo this with a rotisserie chicken for a super easy and meal with an extra protein kick. OR Toast the gnocchi with the red pepper and added a little garlic. Also added the mint dill and scallions to the spinach and let it all sit while gnocchi cooked, as opposed to adding later. I also topped with a little bit of Parmesan, very tasty!!

Cauliflower Parmesan

I roasted the cauliflower until golden, toasted some panko on the stove with a little bit of olive oil and when putting the dish together, I layered panko on top of the cauliflower prior to baking. Also added sautéed leeks, onions, and several cloves of garlic. Used almost 2 jars of Rao's sauce. Prior to serving, I threw on some additional panko for some extra crunch. Wonderful dish!
