Simple Berry Cobbler

This was relatively easy to make but took wwwaayy longer to cook through, dough was still raw underneath at 55mins, cooked for another 30 odd mins until cooked through. Might be easier to cook in a shallower casserole dish.

Moroccan Lamb Chili with Sweet Potatoes

Pretty tasty and wholesome but you can’t taste the lamb :( might as well be beef. Mine didn’t brown as the pan was crowded by the onions, maybe the issue? I also used Barker’s Chipotle in place of harrisa which could also add to chili flavours. Very easy and tasty though. And you could hide any vege in here! Peas, corn, leeks, cabbage, etc

I bastardized this with whatever we had in the fridge/cupboard and it was excellent! 1 can chickpeas 1 can pinto beans 2 packs mozzarella pearls Handful Kalamata olives Handful green Mediterranean olives Chopped spinach Handful mixed nuts and seeds Handful coconut chia seed clusters Topped with Barkers herb and caper dressing. YUM!!

Apple Crumble

Amazing! We used a tin of blueberries and 1.6kg of golden delicious apples and upped the initial flour to 3Tbs to compensate the liquid from the blueberries (and topped some out). Baked for 40mins and the apples still had a bit of crunch to them so could have gone longer. Super yum, although it did take 1hr+ to put together.

Delicious!! I had lamb so it was a shepherds pie and I was too impatient to let the lamb brown but it was still delicious! I didn’t have any carrots so had to add about 3 tsp sugar to balance out the flavour.

Coconut Curry Soup with Dumplings

I wish this was better! The broth was so thin and had no depth at all, I had to add so much extra stuff to make it taste any good, but the idea was there. Use up all the leftover vege in the crisper bin; I used onion, celery, green onion. Then added Gochujang, chicken stock cube, sesame oil and a lot more soy.

This was delicious! Made some tweaks; Used frozen preprepared squid in the air fryer, added fresh diced capsicum and changed out the sauce for mayo and sweet chili. So damn good!!!
