With the exception of the phyllo dough, which I always have on hand, this ham and spinach pie recipe is made entirely from Easter dinner leftovers. One of my neighbors traded me four freshly caught trout for a slice! —Teena Petrus, Johnstown, Pennsylvania
Try this tasty one-pan dish for an easy low-mess breakfast or brunch. This recipe also works well with bacon or sausage instead of ham. I sometimes saute chopped peppers and onions until tender and whisk them in with the eggs for added flavor and color. —Andrea Bolden, Unionville, Tennessee
This ham casserole recipe always brings back fond memories of her when I prepare it. It was one of my mother's favorite recipes. It's a terrific use of leftover ham from a holiday dinner. —Linda Childers, Murfreesboro, Tennessee

As it cooks, the sauce becomes a syrup and coats the carrots. Very simple to taste and everyone will love this side dish. Fantastic for a holiday dinner but easy enough to serve for a weeknight meal.

One night I was feeling lazy so instead of taking the time to roll every enchilada, I decided to just layer it all in a casserole dish. BIG hit. Even got my picky 2 year old to devour it and I've been making it this way ever since!
