Kolokithokeftedes (Greek Zucchini Fritters) with Tzatziki
Ingredients

  • 1 bunch (about 8) scallions, white and light green parts finely chopped
  • ½ teaspoon nutmeg
  • 1 ½ cups crumbled feta
  • 4 large eggs, lightly beaten
  • 1 cup flour (plus more if needed)
  • Salt and pepper
  • 4 tablespoons olive oil

  • 2 cups greek yogurt
  • 1 clove of garlic, minced
  • ½ cup grated,  peeled cucumber
  • 1 teaspoon red wine vinegar or lemon juice
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper
