Crustless Chicken Pot Pie with Keto Biscuits
Ingredients
  • 2 medium onion
  • 3 cloves garlic (one tablespoon chopped)
  • 2 tablespoon butter
  • 4 stalks celery
  • 3 large carrots
  • ¾ cup green peas
  • 1.5 cups shredded chicken breast, cooked
  • 2 cups chicken bone broth
  • pinch salt and pepper
  • ⅛ teaspoon xanthan gum
  • ¼ cup heavy whipping cream
  • ½ cup shredded cheese (cheddar is a popular choice; I used an Italian Blend of Parmesan, Asiago, Fontina and Romano)
  • 1 recipe keto-friendly biscuits (optional)
