Jamaican Style Cauliflower Rice
Sweet with a little kick

Ingredients
  • ½ head of cauliflower
  • 1 to 2 Jalapeños (De-seed for less spicy) - optional
  • ½ Red Onion Chopped
  • ½ of a canned of chopped Pineapple in Water or its own juice (Do not get the one with the added sugars beware!!!! Read the label) or fresh Pineapple if its in season
  • 1 to 2 Tomatoes chopped up
  • 2 tablespoon of Healthy Fat oil (Avocado, coconut or grapeseed oil)

Steps
  1. Take your cauliflower and cut into piece's so that it can easily go through your food processor. Take those piece's and with the Grating attachment on your food processor and PULSE the cauliflower through to get the rice consistency.
  2. In a separate bowl place 2 eggs and a tbsp of your healthy fat and whip together. (I like to juste avocado oil)
  3. Start by adding your 1 tbsp of Healthy fat to your pan
  4. Add in your chopped red onion and let cook on a low to medium heat till your onion starts to caramelize (they will start to look see through).
  5. Next add in your Jalapeño if you decided to use those and let cook down for another 1 to 2 min.
  6. Next add in your pineapple piece's and let caramelize by letting them cook for
  7. Add in your chopped tomato and stir and let cook for 1min.
  8. Finally add in your cauliflower and mix all together. Turn heat to a lower setting but not all the way low. Clear out the center of the pan and make a circle with your rice mixture. Pour your eggs in the middle and let cook till scrambled. Once cooked mix all together. Serve and Enjoy!

  • This whole process is super quick and DELICIOUS one the whole family will love!
