Asparagus Salad Recipe (Vegan)

  • 1 (10-ounce) bag frozen peas
  • 2 bunches thin (but not pencil) asparagus (14 to 16 ounces each)
  • 2 small Belgian endives (3 to 4 ounces each)
  • 1 small head radicchio (about 8 ounces)
  • 1 bunch fresh dill
  • 1 bunch fresh mint
  • 1 cup walnuts, pecans, or a combination
  • ½ cup olive oil
  • 2 tablespoons Dijon mustard
