Make Ahead Savory Vegan Breakfast Jars
Ingredients

  • 1 cup dry quinoa
  • 2 cups vegetable broth

  • 1 to 2 tsp olive oil
  • 3 scallions, sliced with white and green parts separated
  • 3 to 4 cloves garlic, crushed or finely minced
  • 1, ~400g block extra firm tofu, drained
  • ½ tsp each garlic powder and onion powder
  • ¼ to ½ tsp ground turmeric
  • 1 tbsp reduce sodium soy sauce or coconut aminos
  • 1 tbsp tahini
  • ¼ cup plant-based milk (I used soy milk)
  • Salt and pepper to taste
  • subheading: Air Fried Potatoes:
  • 5 baby potatoes, quartered
  • 1 tsp cornstarch
  • ½ tsp adobo seasoning or old bay seasoning
  • 1 to 2 tsp olive oil

  • Cherry Tomatoes, halved
  • Baby Spinach or Massaged Kale
  • Avocado, cubed
  • Pickled Onions
  • 1, 15 oz can blacked beans, rinsed and drained
