Apple and pear salad with balsamic maple cinnamon dressing

Ingredients
  • 1 T maple syrup
  • 1 T balsamic vinegar
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ¼ tsp Dijon mustard
  • ¼ tsp ground black pepper
  • ¼ cup extra virgin olive oil
  • 5 ounce package baby greens on spinach
  • 1 apple, cored and thinly sliced
  • 1 pear, cores and thinly sliced
  • 4 ounces gorgonzola cheese, crumbled
  • ½ cup walnuts, coarsly chopped
Steps
  1. Whisk together the maple syrup, balsamic, salt, cinnamon, mustard and pepper. Continue whisking constantly while very slowly drizzling in the extra virgin olive oil. Set aside.
  2. Divide greens into 2 to 4 bowls. Top each with apple and pear slices, Gorgonzola and walnuts.
  3. Drizzle dressing evenly over each bowl. Serve immediately!
