Ingredients
  • 6 tomatoes, peeled and seeded*
  • 1 large onion*
  • 2 medium carrots*
  • 1 celery stalk*
  • 1 seedless cucumber, peeled*
  • 1 green bell pepper, seeded*
  • 1 red bell pepper, seeded*
  • ¾ cup cooked corn*
  • 3 cups vegetable juice
  • 2 garlic cloves, minced*
  • ½ cup olive oil**
  • ¼ cup lemon juice
  • 1 teaspoon Worcestershire sauce
  • 5 drops hot sauce
  • 1 tablespoon freshly chopped basil*
  • 1½ teaspoons coarse salt
  • ½ teaspoon freshly ground pepper
Steps
  1. Dice tomatoes, onion, carrots, celery, cucumber, and peppers. Combine the remaining ingredients in a large bowl and stir well. Stir in the chopped vegetables. Use an immersion blender, if desired. Chill for at least 3 hours before serving.
