Taco Salad

Ingredients
  • 10 oz ground beef
  • 1 tbsp Chili powder
  • 1½ tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed red pepper
  • ½ tsp dried oregano
  • ⅓ tsp cayenne pepper
  • 1 tbsp water
  • 1 cup of Romaine Lettuce
  • 1 cup of chopped tomatoes
  • 1 cup of alfalfa sprouts
  • Salt and pepper
  • 1 cup of onion
  • 1 jalapeno (optional)
  • 1 tbsp Healthy fat oil option (coconut, grapeseed or avocado oil)
  • Nutritional Yeast (optional) for a cheesy effect
  • 1 lime
Steps
  1. Start by sautéing your chopped onion in your healthy fat oil option. If using a Jalapeno this is the time to add it .
  2. Once the onion is fragrant (about 2 to 3mins) add your 10oz of ground beef. Let cook until done, about 5 to 7mins).
  3. Drain your beef of the excess grease. Place back in the pan on low heat with your water and add all of your spices to give your meat and onions a Mexican taste.
  4. While that is cooking down (till the water is no longer in the pan) prepare your salad. Mix your lettuce, tomatoes, sprouts and nutritional yeast in a bowl. Once Beef is finished cooking  top salad with your beef and onion mixture. Squeeze the juice of half a lime over top and finish with a little avocado oil and salt and pepper for your dressing
  5. Enjoy!!!

  • 1 cup tomatoes: 80 calories
  • 1 cup of lettuce: 7 calories
  • 1 cup of alfalfa sprouts: 80 calories
  • 1 cup of onion: 64 calories
  • Total Calories: 831 calories (one serving size = 415.5 calories)
  • This is a great meal to cook ahead of time and divide your ingredients in separate "To Go" containers and then mix all together once your ready to eat! You can always pop your meat and onion mixture in the microwave to warm it up.
  • Also makes great Taco lettuce wraps for a different meal!
