Pumpkin spiced granola
Ingredients
  • 1 cups old fashioned rolled oats
  • 1 cup raw pecan halves
  • 1 cup raw pumpkin seeds
  • ½ cup unsweetened shredded coconut
  • ½ cup dried fruits (apricot, cranberries, raisins, etc)
  • ¼ cup maple syrup
  • ¼ coconut oil, melted
  • ¼ canned pumpkin
  • 2 tsp pumpkin spiced blend
Steps
  1. Preheat oven to 350. Line lg baking sheet with parchment paper.
  2. In one bowl, combine oats, nuts, seeds, coconut, and dried fruit.
  3. In separate bowl, combine maple syrup, coconut oil, canned pumpkin and pumpkin spiced blend.
  4. Pour liquid mixture over dry ingredients and mix well to combine.
  5. Spread granola evenly over baking sheet. Bake until golden brown, 20 to 25 minutes, stirring every 10 minutes.
  6. Store in air tight container for up to one week.
