Kale and Bacon Hash Brown Casserole
Ingredients

  • 6 slices bacon
  • ½ cup finely diced yellow onion (½ medium)
  • 4 cups lightly packed chopped kale
  • 1 garlic clove, minced
  • 12 large eggs
  • 1 cup whole milk
  • 1 tablespoon Dijon mustard
  • 6 ounces mozzarella cheese, shredded (about 1 ½ cups)
  • 6 ounces Gruyère cheese, shredded (about 1 ½ cups)
  • One 20-ounce bag frozen hash browns, thawed and patted dry
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
