Traditional Luxembourg bean soup.

Ingredients
  • subheading: For the Soup:
  • 1½ Lbs. Fresh Green Beans
  • 1 Yellow Onion (diced)
  • 1 Leak (sliced and rinsed)
  • ½ Cu. Celeriac (peeled and diced)
  • 2 Tbsp. Unsalted Butter
  • 2 Tbsp. All-Purpose Flour
  • 6 Cu. Cold Water
  • 3 Yukon Gold Potatoes
  • Kosher Salt
  • Fresh Cracked Black Pepper
  • subheading: For the Garnish:
  • Sour Cream
  • German Sausage (sliced)
Steps
  1. Melt the butter in a large pot and whisk in the flour, until a smooth paste forms (a light roux) - cook for about a minute. Do not let color.
  2. Whisk in the water, a little at a time, so as to avoid lumps. Start with 6 cups. You can add more at the end if you'd like a thinner broth.
  3. Add all ingredients except for the potatoes and the garnish. Bring to a simmer and cook 20 minutes.
  4. Add the cubed potatoes and continue cooking until tender.
  5. Garnish and serve.
