Ingredients
  • 14 red chillies
  • 2 green bird’s eye chilies (optional)
  • 5 shallots finely sliced or chopped
  • 1kg ripe tomatoes chopped
  • 6 to 8 cloves garlic finely sliced
  • 1 teaspoon each of dried cumin & coriander
  • 2 teaspoons dried turmeric
  • salt
  • 1 tablespoon (more or less) balacan (prawn paste - this does smell a bit, so can be omitted - at your peril)
  • ½ cup peanut or sunflower oil (oil is good on rice)
Steps
  1. Heat oil in pan & add onions.
  2. Once soft, add garlic, balacan, spices, tomatoes & chillies.
  3. Lower heat & keep cooking until oils separate from solids.
  4. Pour into heatproof jar & seal.
  5. Ready to serve on rice etc.
