Ingredients
- 14 red chillies
- 2 green bird’s eye chilies (optional)
- 5 shallots finely sliced or chopped
- 1kg ripe tomatoes chopped
- 6 to 8 cloves garlic finely sliced
- 1 teaspoon each of dried cumin & coriander
- 2 teaspoons dried turmeric
- salt
- 1 tablespoon (more or less) balacan (prawn paste - this does smell a bit, so can be omitted - at your peril)
- ½ cup peanut or sunflower oil (oil is good on rice)
Steps
- Heat oil in pan & add onions.
- Once soft, add garlic, balacan, spices, tomatoes & chillies.
- Lower heat & keep cooking until oils separate from solids.
- Pour into heatproof jar & seal.
- Ready to serve on rice etc.
