This Peri-Peri Chicken Has More Flavor Than Any Dish I'Ve Ever Made

  • 3 dry bay leaves
  • 3 tbsp smoked paprika
  • 16 sprigs stripped thyme
  • 4 tbsp tomato paste
  • 1 lemon juiced
  • 1 ½ tbsp white wine vinegar
  • ¾ cup olive oil (177 ml)
  • 1 ½ tbsp unsalted butter to complete the sauce
