TM Quinoa Salad with Chicken and Avocado
Ingredients
  • 4 sprigs fresh flat-leaf parsley, leaves only
  • 1 garlic clove
  • 2 to 3 pieces lemon, zest only, no white pith (1 x 4 cm)
  • 2 tsp salt
  • 70 g extra virgin olive oil
  • 400 g skinless chicken breast fillets, cut into cubes (2 to 3 cm)
  • 2 tsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 pinch ground black pepper
  • 1210 g water
  • 100 g quinoa
  • 200 g cherry tomatoes, cut into halves
  • 150 g cucumber, cut into pieces (2 to 3 cm)
  • 100 g avocado, flesh only, cut into pieces (2 to 3 cm)
