Classic Gluten Free Oatmeal Raisin Cookies (Dairy Free)

  • 1 ½ cups gluten free rolled oats
  • 1 teaspoon baking powder

  • ¼ teaspoon ground nutmeg (optional, but recommended)
  • ⅛ teaspoon ground cloves (optional, but recommended)
  • ⅓ teaspoon salt

  • ½ cup melted coconut oil
  • ½ cup + 2 tablespoons coconut sugar
  • 1 flax egg ( 1 tablespoon ground flaxseed + 3 tablespoons warm water, whisked together, set for 15 minutes)
  • 1 ½ teaspoons pure vanilla extract
  • 2 tablespoons pure maple syrup

  • ½ cup walnuts, chopped (optional)
