Crab Imperial (from Nancy Davis)
Ingredients
  • 1 lb. fresh crabmeat
  • 2 eggs, hard boiled
  • 1 jar (4 oz.) minced pimentos, drained
  • ½ green pepper chopped fine
  • ¼ c. onion, minced
  • pinch of dried parsley
  • ----------------------------
  • 2 T. butter
  • ⅔ c. 2% milk
  • 2 T. flour
  • -----------------------------
  • 1 t. prepared mustard
  • juice of ½ lemon
  • 2 T. mayonnaise
  • Dash tabasco sauce
  • salt and pepper to taste
Steps
  1. Preheat oven to 350
  2. Combine first 6 ingredients, folding gently to not break up the crabmeat. Set aside.
  3. Make a white sauce: Melt butter in a saucepan, add flour and whisk until smooth. Gradually add milk, whisking until smooth. Cook over medium heat until thick.
  4. Add remaining ingredients to saucepan, and then gently fold in crabmeat mixture.
  5. Pour into a casserole dish and bake for 35 to 40 minutes until golden brown
