Ingredients
- 1 lb. fresh crabmeat
- 2 eggs, hard boiled
- 1 jar (4 oz.) minced pimentos, drained
- ½ green pepper chopped fine
- ¼ c. onion, minced
- pinch of dried parsley
- ----------------------------
- 2 T. butter
- ⅔ c. 2% milk
- 2 T. flour
- -----------------------------
- 1 t. prepared mustard
- juice of ½ lemon
- 2 T. mayonnaise
- Dash tabasco sauce
- salt and pepper to taste
Steps
- Preheat oven to 350
- Combine first 6 ingredients, folding gently to not break up the crabmeat. Set aside.
- Make a white sauce: Melt butter in a saucepan, add flour and whisk until smooth. Gradually add milk, whisking until smooth. Cook over medium heat until thick.
- Add remaining ingredients to saucepan, and then gently fold in crabmeat mixture.
- Pour into a casserole dish and bake for 35 to 40 minutes until golden brown
