Crustless Cranberry Pie

Ingredients
  • 1 Cup Flour
  • 1 Cup Sugar
  • ¼ Tsp Salt
  • 1 Tsp Cinnamon
  • 2 Cups fresh Cranberries
  • ½ Cup chopped Walnuts or sliced Almonds
  • ½ Cup melted Butter
  • 2 Eggs
  • 1 Tsp Almond Extract
Steps
  1. Preheat oven to 350°.
  2. Grease a 9 inch pie pan
  3. Combine flour, sugar, cinnamon, and salt.
  4. Stir in the Cranberries and the nuts, toss to coat.
  5. In a separate bowl mix the melted butter, beaten eggs, and almond extract.
  6. Mix the butter and flour mixtures together mixing well.
  7. Spread batter into the prepared pan.  (If using frozen cranberries the mixture will be very thick.)
  8. Bake at 350° for 40 minutes or until a wooden toothpick comes out clean.
  9. Serve warm or room temperature.  Flavors tend to be better the next day.
