Roasted Butternut Squash and Goat Cheese Pasta with Hot Honey
Ingredients
  • Preheat oven 400F
  • 1 small butternut squash diced (about 3 ½ cups) drizzle with olive oil and season with salt and pepper - add to a sheet pan
  • 175g goat cheese - add to the middle of the sheet pan
  • Roast the squash and goat cheese for 25 minutes or until the squash is slightly brown and soft.
  • 3 (ish) cups short pasta - boil in salted water. Reserve 1 cup pasta water. Drain pasta and set aside.
  • Add pasta to sheet pan with cooked squash and goat cheese. Add about ½ cup water and toss.
  • ½ cup chopped toasted hazelnuts- scatter over pasta
  • 3 Tbsp hot honey - drizzle over pasta
