Chicken Marengo with Mushrooms and Tomatoes
Ingredients
  • 1 ½ pounds boneless, skinless chicken breasts, sliced
  • ⅓ cup all-purpose flour
  • ¼ cup extra-virgin olive oil divided
  • 1 large onion, sliced
  • ½ bell pepper, sliced, optional
  • 2 tablespoons unsalted butter
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, pressed
  • ½ cup dry  white wine, or dry sherry
  • 1 cup chicken stock, preferably sodium free or low sodium
  • 1 (14 ½-ounce) can  diced tomatoes
  • ½ medium lemon, juiced
  • 2 tablespoons tomato paste
  • 3 sprigs fresh parsley
  • 1 bay leaf
  • ½ teaspoon salt, or to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons minced fresh parsley, for garnish
  • Pasta, egg noodles, or rice, for serving
