Coconut Lime Rice
Ingredients
  • 1½ Cups basmati rice
  • 1 Cup canned coconut milk full fat no cream
  • 2½ Cup water
  • ¼ tsp salt
  • 1 Tbsp coconut oil
  • ½ lime juiced
  • ½ lime zest
  • 1 Cup frozen peas
  • ½ tsp dried cilantro
Steps
  1. In a saucepan, on medium heat, place rinsed and drained rice, water, milk, salt, lime zest, and coconut oil.  Let boil.
  2. Once boiling, reduce to simmer and add peas, stir and cover for approximately 15 minutes.
  3. Turn off heat let sit for 15 min.
  4. Fluff and add salt if needed.
  5. Add lime juice and cilantro.
