Ingredients
  • 1 lb ground turkey
  • 1 small yellow onion, chopped
  • 1 yellow pepper, chopped
  • 1 jalepeno, diced small
  • 2 cans no salt added diced tomatoes
  • 1 can Rotel, medium spice with chilis
  • 1 can no salt added Great Northern beans, drained and rinsed
  • 1 can no salt added pinto beans, drained and rinsed
  • 1 can no salt added black beans, drained and rinsed
  • 3 cups low-sodium vegetable broth
  • ½ teaspoon sea salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 tablespoons paprika
  • 3 tablespoons chili powder
Steps
  1. Brown beef with yellow onion, drain.
  2. Rinse and drain beans.
  3. Add all ingredients into large crock pot.
  4. Cook on high for 4 hours or on low for 6 hours; stirring occasionally.
  5. Serve with reduced-fat shredded cheese, Greek yogurt (or dollop of sour cream), crackers, green onion, etc.
  6. Enjoy!
