Bbq Shrimp with Garlicky Kale & Parmesan-Herb Couscous
Ingredients
  • 1 cup low-sodium chicken broth
  • ¼ teaspoon poultry seasoning
  • ⅔ cup whole-wheat couscous
  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon butter
  • 3 tablespoons extra-virgin olive oil, divided
  • 8 cups chopped kale
  • ¼ cup water
  • 1 large clove garlic, smashed
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon salt
  • 1 pound peeled and deveined raw shrimp (26 to 30 per pound)
  • ¼ cup barbecue sauce (see Tip)
