Pressure-Cooker Corn Risotto
Ingredients
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 1 clove garlic, smashed
  • Kosher salt and freshly ground pepper
  • 1 ½ cups arborio rice
  • ½ cup dry white wine, such as Sauvignon Blanc
  • 2 ¼ cups fresh corn kernels (from 3 ears), cobs reserved
  • 1 pint cherry tomatoes, halved or quartered if large
  • 2 ounces Parmigiano- Reggiano, finely grated (½ cup), plus more, shaved, for serving
  • Fresh basil, for serving
