Herby Rice Salad with Crispy Za’Atar Chickpeas
Ingredients
  • subheading: Za’atar Chickpeas:
  • 1, 15 oz can of chickpeas, drained and rinsed
  • 2 tsp za’atar
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • Pinch of salt
  • 1 tbsp of avocado oil
  • subheading: Rice Salad:
  • 1 cup uncooked white Jasmine rice
  • 1 ½ cups fresh parsley, woody stems removed and finely minced
  • 3 tbsp fresh mint, minced
  • ½ a small shallot, minced
  • Juice and zest of one lemon
  • ½ tbsp maple syrup (omit if desired)
  • 1 clove garlic, grated
  • Salt and pepper to taste
  • 1 tbsp extra virgin olive oil
  • 1 tbsp rice wine vinegar
  • subheading: Assemble:
  • 1 large tomato, seeds removed and diced
