Easy Filipino arroz caldo aka chicken congee

Ingredients
- 6 to 8 medium pieces of chicken (e.g. legs, thighs) or 12 or so wings
- 2 cups of uncooked rice
- Big piece of ginger (3 to 4 inches long)
- 1 chicken stock cube
- 1 liter of boiled water
Steps
- Boil water
- Finely dice ginger.
- or
- Cheat: chop ginger into small pieces about 1 inch thick, then add to blender with water to create ginger mixture.
- Put rice in Instant Pot (no need to rinse!)
- Add chicken, ginger and boiled water to Instant Pot.
- Set Instant Pot to Meat (32 min on High).
- Serve in a bowl. Optional extras: soy sauce, fried onion, boiled egg, salad onion garnish.
Notes
- You can also saute onion and garlic and add to pot before setting the Instant Pot to cook.
- You can also do this all in a slow cooker over about 3 hours!
