Instant Pot Arroz Caldo
Easy Filipino arroz caldo aka chicken congee

Ingredients
  • 6 to 8 medium pieces of chicken (e.g. legs, thighs) or 12 or so wings
  • 2 cups of uncooked rice
  • Big piece of ginger (3 to 4 inches long)
  • 1 chicken stock cube
  • 1 liter of boiled water
Steps
  1. Boil water
  2. Finely dice ginger.
  3. or
  4. Cheat: chop ginger into small pieces about 1 inch thick, then add to blender with water to create ginger mixture.
  5. Put rice in Instant Pot (no need to rinse!)
  6. Add chicken, ginger and boiled water to Instant Pot.
  7. Set Instant Pot to Meat (32 min on High).
  8. Serve in a bowl. Optional extras: soy sauce, fried onion, boiled egg, salad onion garnish.
Notes
  • You can also saute onion and garlic and add to pot before setting the Instant Pot to cook.
  • You can also do this all in a slow cooker over about 3 hours!
