Mediterranean Bean Salad (Three Bean Salad)
Ingredients
  • subheading: For vinaigrette:
  • 1 garlic clove, minced
  • 1 tablespoon whole grain mustard [used Dijon whole grain - don't skimp]
  • 1 teaspoon honey
  • ½ teaspoon dried oregano
  • 1 pinch red pepper flakes
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons white wine vinegar
  • ¼ cup olive oil
  • note: maybe add some of the olive juice
  • subheading: For salad:
  • 1-15 ounce can cannellini beans drained and rinsed
  • 1-15 ounce can kidney beans drained and rinsed
  • 1-15 ounce can chickpeas drained and rinsed
  • 1 red bell pepper, diced
  • 1 cup halved cherry tomatoes or grape tomatoes
  • 1 cup diced cucumbers [sub zucchini]
  • ¼ cup finely diced red onions
  • ½ cup halved pitted Kalamata olives [more?]
  • ⅓ cup crumbled feta cheese [definitely more]
  • 2 tablespoons chopped parsley
