Shapley's CHOCOLATE AMARETTO CHEESECAKE
Ingredients
  • subheading: CRUST:
  • 1 egg white
  • ¼ cup sugar
  • ¾ pound ground graham cracker crumbs
  • ¼ cup semi-sweet chocolate chips
  • Combine first three ingredients and press into the bottom
  • of a springform pan. Bake at 370 degrees for 5 to 7 minutes.
  • Cool. Sprinkle chocolate chips over crust in bottom of pan.
  • note: Editor's note: I did not have a springform pan large enough to
  • hold the crumb crust and the cream cheese mixture. I used two 8 x
  • 8-inch aluminum foil pans, froze one cheesecake, and served the
  • other. It worked well.
  • subheading: FILLING:
  • 2 ¼ pounds cream cheese
  • 1 cup sugar
  • 2 ½ tablespoons cocoa
  • 5 eggs, plus 2 yolks
  • 4 ¾ cups heavy whipping cream
  • 1 ounce Amaretto liqueur
  • In mixer, mix cream cheese and sugar. Add cocoa. Add eggs
  • and yolks, one at a time, scraping sides of bowl after each
  • addition. Add cream and amaretto, scraping down sides.
  • Add filling to crust, filling to ½ inch below top of pans.
  • Bake at 325 degrees, 50 to 60 minutes. Cool at room
  • temperature. Chill in refrigerator.
