Parmesan Breaded Chicken

Ingredients
  • 1 lb - Boneless/skinless chicken breasts or tenders
  • 2 Tbl - olive oil
  • ½ tsp - salt
  • ½ tsp - pepper
  • ⅛ tsp - cayenne pepper
  • ¾ cup - panko bread crumbs
  • ¾ cup - grated Parmesan cheese
Steps
  1. Heat oil in pan and swirl to coat it
  2. Add all dry ingredients to a bowl and mix
  3. Dip chicken in crump mixture to coat both sides and press coating onto the chicken to help it stick
  4. Cook chicken in the skillet with lid, flipping half way though (5 to 7 min per side or no pink remains inside)
  5. Serve with salad/rice/veggie/etc
Notes
  • From J-Wow (Made this from the left over crumb mix from the Parm breaded squash recipe and it turned out great on the chicken!)
