Clean Eating Broccoli Salad
Ingredients
  • 1 large head broccoli (chopped small)
  • 1 medium avocado (peeled, pitted and diced)
  • 1 medium tomato (chopped)
  • ½ cup sliced almonds
  • 2 medium garlic cloves (pressed, smashed or minced)
  • 3 tbsp. flatleaf parsley (chopped)
  • 2 tsp. fresh thyme (chopped)
  • 3 tbsp. balsamic vinegar
  • 1 large green onion (both green and white parts)
  • ¼ cup clean eating mayonnaise (store-bought or homemade OR 2 to 3 tbsp. olive oil to taste)
  • salt and pepper to taste
