Red Velvet Cupcakes with Cream Cheese Frosting

  • 1 lb (2 blocks) cream cheese (not softened)
  • 1 stick (½ cup) butter, at room temperature
  • 1 Tbsp. vanilla extract
  • 4 cups powdered sugar, sifted
