Honey Garlic Meatballs

Ingredients
  • MEATBALLS
  • 2 lbs lean ground beef
  • 4 fresh white bread slices, processed into crumbs
  • 2 large eggs, fork beaten
  • 1 tsp salt
  • ¼ tsp cayenne pepper
  •  
  • HONEY GARLIC SAUCE
  • 1 Tbsp hard margarine (or butter)
  • 8 garlic cloves, minced
  • 14oz can of stewed tomatoes (with juice), pureed
  • ¾ cup liquid honey
  • ¼ cup soy sauce
  • 2 tsp cornstarch
Steps
  1. Meatballs
  2. Combine all 5 ingredients in large bowl.
  3. Mix well.
  4. Shape into 1½ inch balls. Arrange in single layer on ungreased baking sheet.
  5. Bake in 500°F oven for 10 to 12 minutes until browned.
  6. Transfer to ungreased 2qt (2L) casserole dish, heat oven to 350°F.
  7. Honey Garlic Sauce
  8. Melt margarine in medium saucepan on medium heat.
  9. Add garlic, heat and stir until garlic is soft but not browned.
  10. Add tomatoes and honey. Stir.
  11. Stir soy sauce into cornstarch in small bowl until smooth
  12. Stir into tomato mixture.
  13. Bring to a boil, stirring constantly, until slightly thickened.
  14. Makes about 2¼ cups of sauce.
  15. Pour sauce over meatballs. Bake uncovered in 350°F oven for about 20mins until meatballs are glazed.
Notes
  • These are also wonderful served as an appetizer. Shape into 1 inch balls. Makes 68.
  • To freeze large quantities of meatballs ahead of time, arrange cooked and drained meatballs in single layer on baking sheet. Freeze, uncovered, for about 1hr until firm. Place in airtight container. Freeze for up to 2 months.
