Ingredients
  • 3 cups marinara sauce
  • ¾ cup vodka
  • ½ cup heavy cream at room temperature
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon pepper, plus more to taste
  • Pasta to serve
Steps
  1. In a heavy, large skillet, simmer marinara sauce and vodka over low heat, stirring often, until mixture reduces by one fourth - about 20 minutes.
  2. Meanwhile, prepare pasta according to package directions. Drain, but reserve ½ cup of pasta water.
  3. Stir in cream and continue to simmer over low heat until sauce is heated through. Add enough pasta water to achieve desired consistency.
  4. Remove skillet from heat and stir in Parmesan, ½ teaspoon salt, ¼ teaspoon of pepper, and more as needed to taste. Toss with pasta OR top pasta with sauce as desired.
