Ingredients
  • 3 large over ripe bananas, mashed (about 1 ⅓ to 1 ½ cups mashed)
  • ½ cup brown sugar, packed
  • 2 Tbsp. unsalted butter
  • 3 Tbsp. Dark Rum or Spiced Rum (I use Captain Morgan)
  • 2 large eggs
  • ¼ cup vegetable oil plus ¼ cup applesauce
  • ¼ cup buttermilk (or milk, or yogurt blended with milk)
  • 2 cups flour (Sub any mixture of flour and oat flour, or use half flour and one cup of blended white beans)
  • ½ cup granulated sugar
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ½ tsp allspice or nutmeg
  • ½ tsp. cinnamon
  • ½ tsp. cardamom
  • ½ tsp ginger
  • ½ cup chopped crystallized ginger
  • ½ cup raisin (optional, or you can just use extra ginger or nuts)

  • subheading: For the glaze:
  • 1 to 2 cups powdered sugar
  • 1 to 2 Tbsp. rum
  • 2 Tbsp. unsalted butter, melted
