PAT’S DAIRY FREE STEAMED JAM PUDDING

Ingredients
- 150 gms VITALITE
- 60 gms SUKRIN 1
- 2 EGGS
- 100gms SELF RAISING FLOUR
- 50 gms GROUND ALMONDS
- 50 mls COLD WATER
- 4 TABLESPOONS JAM
Steps
- Cream the vitalite and sugar until light and fluffy add the eggs one at a time and mix, add the water and fold in the flour, grease a 1 litre pudding tin and put the jam at the bottom put the pudding mixture on top of the jam and put the lid on
- Put the pudding tin on the trivet and lower it into the inner pot add boiling water to half way up the pudding tin
- PUT THE INSTANT POT LID ON WITH THE VENT OPEN
- PRESS THE STEAM BUTTON
- STEAM FOR 20 minutes
- WHEN STEAM STARTS TO COME OUT SET A TIMER FOR 20 MINUTES THE INSTANT POT DOESNT COUNT DOWN ON STEAM
- PRESS CANCEL TURN VENT TO SEAL AND SET TO MANUAL HI PRESSURE FOR 25 MINUTES
- THEN LET IT GO TO NPR FOR 10 MINS
