PAT’S DAIRY FREE STEAMED JAM PUDDING

Ingredients
  • 150 gms VITALITE
  • 60 gms SUKRIN 1
  • 2 EGGS
  • 100gms SELF RAISING FLOUR
  • 50 gms GROUND ALMONDS
  • 50 mls COLD WATER
  • 4 TABLESPOONS JAM
Steps
  1. Cream the vitalite and sugar until light and fluffy add the eggs one at a time and mix, add the water and fold in the flour, grease a 1 litre pudding tin and put the jam at the bottom put the pudding mixture on top of the jam and put the lid on
  2. Put the pudding tin on the trivet and lower it into the inner pot add boiling water to half way up the pudding tin
  3. PUT THE INSTANT POT LID ON WITH THE VENT OPEN
  4. PRESS THE STEAM BUTTON
  5. STEAM FOR 20 minutes
  6. WHEN STEAM STARTS TO COME OUT SET A TIMER FOR 20 MINUTES THE INSTANT POT DOESNT COUNT DOWN ON STEAM
  7. PRESS CANCEL TURN VENT TO SEAL AND SET TO MANUAL HI PRESSURE FOR 25 MINUTES
  8. THEN LET IT GO TO NPR FOR 10 MINS
