Chicken & Cheddar Biscuit Casserole 1/2 batch
Same great recipe, better for two...make in a 8x8-in. baking dish.
Ingredients
  • 2 tablespoons butter, cubed
  • 1 small onion, chopped
  • 1 celery rib, chopped
  • 1 medium carrot, chopped
  • 1 garlic cloves, minced
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 cups chicken broth or stock
  • Optional: ½ cup of corn, peas, string beans or other chopped vegetables
  • 2½ cups cubed cooked chicken
  • subheading: BISCUIT TOPPING:
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon cream of tartar
  • ¼ cup cold butter, cubed
  • ⅓ cup 2% milk
  • ½ cup shredded cheddar cheese
  • ½ cup roasted sweet red peppers, drained and chopped
