  • chocolate pancakes: ⅔ cup (80g) flour, 1 tbsp flax seeds, pinch of salt, 1 tsp baking powder, 1 tbsp cacao powder, ⅔ cup (160g) soy milk + 1 tbsp apple cider vinegar, 2 tbsp soy yogurt
  • chickpea pancake: veggies of choice, I used mushrooms, leek & garlic; 1 cup (125g) chickpea flour, salt, pepper, scrambled egg seasoning, 1 tsp baking powder, 1 tbsp apple cider vinegar, 1 cup (250ml) water
  • focaccia: 400g bread flour, 300g water, 3g yeast, 7g salt, 15g olive oil; 3 rounds of stretch & fold every 30 minutes, then set in the fridge overnight. the next morning, put in a well-oiled baking dish and let proof until doubled in size. bake at 230°C for 20 to 25 minutes

  • chana dal-inspired stew: 1 packet mushrooms, 1 red onion, 2 cloves of garlic, ginger, 1 tsp each turmeric, cumin, coriander, tomato paste, passata, vegetable broth, soaked chana dal, spinach, frozen peas, tahini, salt & pepper to taste
  • mushroom fennel pasta: 1 tsp fennel seeds (dry toasted), 1 packet mushrooms, 1 onion, 3 cloves of garlic, 2 tbsp tomato paste, salt, pepper, 1 tsp cumin, a good amount of pasta water, 2 tsp nutritional yeast, spinach, chickpeas
