Chili Cheese Casserole

Ingredients
  • ½ Lb. Elbow macaroni, cooked for 1 minute less than the package recommends
  • 1 Lb. Lean ground beef
  • 3 T. Olive oil
  • 1 Large yellow onion or two small yellow onions
  • 6 Garlic cloves, minced
  • 1½ T. Chili powder
  • 1 t. Ground cumin
  • ½ t. Black pepper
  • 1-28 oz. can Crushed tomatoes
  • 1-14.5 oz. can Petite diced tomatoes
  • 2 t. Splenda brown sugar
  • 2 ½ C.  Co-jack cheese, or other cheese of choice
  • Chili Cheese Fritos for garnish
  • 2 Green onions, chopped for garnish
