Basic every day potato salad for summer picnics.

Ingredients
  • 1½ lbs potatoes, cubed and cooked firm
  • ¾ cup mayonnaise
  • 3 to 4 hard boiled eggs, 1 sliced, remaining rough chopped
  • ½ cup celery, sliced or chopped
  • ¼ cup sweet onion, finely chopped (optional)
  • 1 tsp mustard (optional)
  • Salt and pepper
  • Paprika
Steps
  1. Add mayonnaise to a large bowl. Mix in mustard if using.
  2. Add potatoes, eggs, celery, and if using, onion and mix lightly. Add salt and pepper to taste.
  3. Sprinkle with paprika and place egg slices on top. Refrigerate for at least an hour before serving.
Notes
  • The type of potato really doesn't matter much. Baby red potatoes can add an interesting color/presentation aspect.
