Cindy's Berry Cheesecake Popsicles

Ingredients
  • 1.5 cup plain Greek yogurt
  • 4 oz cream cheese
  • .25 tsp vanilla extract
  • .5 cup frozen berries (raspberries, blackberries, blueberries or strawberries)
  • .25 cup granulated Stevia/Erythritol blend
Steps
  1. Add 1 Tbsp sweetener to defrosted berries. Mash with the back of a spoon until you have a puree. Sit aside.
  2. Soften cream cheese in microwave.
  3. Mix together cream  cheese, yogurt, vanilla extract and remaining sweetener until smooth.
  4. Spoon yogurt mixture into 6 popsicle molds until they are about half full. Divide berry mixture evenly into each mold, then finish filling with remaining yogurt mixture. Leave about ΒΌ inch space at top of each mold.
  5. Using a chopstick or a flatware knife (without sharp edges), swirl the berry mix throughout each popsicle. Don't mix until smooth, but just tool to spread throughout so there are streaks of color.
  6. Insert popsicle sticks and freeze for at least 4 hours before unmolding. Popsicles unmold best when run under warm water, then can be stored in individual sandwich bags in the freezer for up to a week.
