Roasted Salmon with Peas and Radishes
Ingredients
  • 2 salmon or trout fillets
  • ⅛ cup extra-virgin olive oil
  • Kosher salt and black pepper
  • 2 tablespoons unsalted butter
  • 1 bunch radishes with greens, halved, reserve 1 cup of greens
  • 1 cup fresh or frozen peas (no need to thaw)
  • 1 tablespoon drained capers
  • ½ tablespoon white miso
  • ½ teaspoon Dijon mustard
  • ¼ cup chopped dill or parsley
