Ingredients
  • 1 Tablespoon extra virgin olive oil and a bit of butter
  • ½ chopped onion
  • 3 cloves minced garlic
  • 2 teaspoons finely minced ginger)
  • A grating of nutmeg and a pinch of cinnimon
  • 2 to 3 tablespoons Thai red curry paste (depending on how spicy you like it)
  • A few teaspoons of mild curry powder
  • 1 can (14 ounce full-fat coconut milk)
  • 2 Tablespoons low-sodium soy sauce
  • A tablespoon of smooth peanut butter
  • Couple handfuls of chopped baby spinach..

  • Enough cod, mahi mahi or halibut for two
  • As many Argentinian raw shelled prawns as you want. I'm a piggy and had 5 each.
  • After the sauce is made add the seafood and simmer covered for 5 minutes.
  • Then toss in the spinach and cook about five more minutes

  • Sprinkle with about a tablespoon fresh lime juice.

  • I had a little yellow zucchini I cooked up with the onions and threw in a few small tomatoes at the end.
