Ingredients
  • 1 cup peanut butter
  • ½ cup coconut oil
  • ½ cup maple syrup
  • ⅓ cup cocoa powder
  • ¾ cup dried cranberries and sultanas
  • 2 cups uncooked oats
  • 1 cup shredded coconut
  • 1 tsp vanilla extract
Steps
  1. Melt the peanut butter, coconut oil and maple syrup over a very low heat, stirring constantly, until melted. Do not allow to boil.
  2. Mix the dried ingredients together and add to the melted peanut butter mix along with the vanilla extract. Mix until well combined.
  3. Press into a square dish, lined with baking paper. Sprinkle with coconut.
  4. Set in fridge for a few hours then cut into squares and store in a container.
