  • 105 grams of Lievito Madre Or the same amount of any other Sourdough Starter you are using this guide for in order to turn a higher hydration sourdough starter into a stiff Lievito Madre. Or if you are rehydrating some dehydrated starter, take 20g and let it soak in the water for 2 hours before mixing in the flour.
