Crockpot Thai Chicken Curry
Ingredients
  • 1 to 2c chicken stock
  • 1- 4oz jar of Thai red or green curry paste
  • 1T soy sauce or liquid aminos
  • 1T fish sauce
  • 1T brown sugar
  • 1T minced ginger
  • 3 cloves minced garlic
  • 2 lbs. boneless skinless chicken thighs or breasts
  • 1 large kabocha squash, cut into 1-inch cubes (or 1 small butternut squash)
  • 1 to 2 Sweet Potatoes
  • 1 medium yellow onion
  • 1 to 2 chili peppers, if you like extra heat
  •  
  • 14 ounce can coconut milk
  • 1 large bunch of kale
  • Optional: cilantro, chili peppers, and lime to serve
