PAT’S 1 SYN GAMMON AND SWEETCORN RISOTTO

Servings: 2 at 1 Syn a serving plus any syns if you top with Parmesan or any other cheese

Servings: 2 at 1 Syn a serving plus any syns if you top with Parmesan or any other cheese
Ingredients
  • 150 gms  risotto rice
  • 1 Large  shallot ( or 2 small shallots ) finely diced
  • 350 mls Gammon or chicken stock
  • 100 mls water
  • 1 Cup sweetcorn
  • Chopped up pre cooked Gammon
  • Frylite spray
  • 1 teaspoon olive oil
Steps
  1. Chop the shallot finely and sauté for about 5 minutes in some  frylite sprayed in the inner pot, add the teaspoon of olive oil and then add the rice and sauté for a 2 minutes more deglaze the pan with some of the stock make sure there are no bits stuck to the bottom of the pot, add the remainder of the stock and the white wine stock pot  and set to manual 7 mins and 5 minutes NPR add the gammon that has  been cut into pieces and the sweetcorn and set to manual 1 minutes then quick release
